Simple Snow Ear & Asian Pear Soup


Ingredients:

  • 2 Asian pears, washed, peeled, cored, cut into bite sized pieces

  • 20-30 grams of snow fungus, rehydrated overnight, cut into bite sized pieces

  • Enough spring water to submerge all ingredients

  • Optional: goji berries or honey to sweeten


Directions:

  • In a pot, bring the water, snow mushrooms, and pears to a boil

  • Simmer covered for 45 minutes, or until all ingredients are soft

  • Stir in optional toppings and serve warm
