Food as Medicine: Lotus


Lotus plants are well known medical plants in traditional medicine. The root is commonly used as food and has shown to have hepatic protective and antioxidant abilities. The root contains phenolic compounds which are known natural antioxidants.

 

Simple Lotus Root Stir Fry


Ingredients:

  • 6 lotus root segments, julienned

  • 2 cloves of garlic, thinly sliced

  • 1 tablespoon of ginger, thinly sliced

  • 1 cup of water or broth

  • 3 scallions, julienned

  • 3 tablespoons olive oil

  • Salt to taste

Steps:

  1. Heat oil in a wok

  2. Add garlic and ginger and stir for 30 seconds

  3. Add lotus and stir fry for 2 minutes

  4. Add salt and water or broth and stir thoroughly, cook until liquids have evaporated

  5. Add scallions and serve hot
